Pumpkin Spice Latte

Few things symbolize the celebration of the autumn season better than a pumpkin spice latte, also known as PSL, so I’m told.  Our culture seems obsessed with pumpkin this time of year and most coffee shops serve various pumpkin spiced drinks laden with sugar, conventional dairy, pesticide residues, artificial flavors, and preservatives. This latte is prepared with nutrient-dense, real-food ingredients that will not hinder the health of the body.


1 cup coconut milk

2 tablespoons pumpkin

1 tablespoon sweetener such as monk fruit, coconut nectar, or maple syrup

1/4 teaspoon pumpkin pie spice

1/4 teaspoon vanilla 

1/2 cup strong brewed coffee or a shot of espresso


Heat coconut milk, pumpkin, sweetener, pumpkin pie spice, and vanilla in a small saucepan.  Once hot, carefully whisk the ingredients until frothy.  Place the coffee in a mug, pour the milk mixture over top and sprinkle with pumpkin pie spice. Alternatively, warm the milk and add all ingredients to a high-speed blender and blend until smooth.  Serve immediately.
