Pumpkin Spice Latte


Pumpkin Spice Lattes seem to be the obsession of many this time of year. You certainly don’t need to frequent the local coffee shop to satisfy your pumpkin spice latte craving—you can make one at home that is infinitely better for you!

Ingredients


1 cup strong brewed coffee or 4 shots espresso
¼ cup pumpkin puree
1¼ teaspoon pumpkin pie spice
¼ cup maple syrup or allulose
1 cup coconut milk
1 cup almond milk
4 teaspoons vanilla extract

Method


Place the pumpkin and pumpkin pie spice in a small saucepan over medium heat and cook, stirring constantly until the spices are fragrant, about 2 minutes. Add the sweetener and stir to combine. Add the coconut milk and almond milk and gently warm them, ensuring they do not boil over. Add the vanilla extract. Using a hand blender or stand blender, blend until smooth and frothy. Pour this mixture over the espresso or coffee. Garnish with whipped cream or additional pumpkin pie spice.

Serves two, enjoy!
