Coleslaw

Preparing  coleslaw at home is very simple; especially with the help of a food processor to shred the cabbage.  Full of enzymes and healthy fats, this classic side dish is super nourishing.  If you have a crowd to feed, simply double the ingredients. 

 

INGREDIENTS

1/2 head green cabbage, shredded

1/2 head purple cabbage, shredded

3 carrots, grated

 3/4 cup quality mayonnaise, such as homemade or primal kitchen

3-4 tablespoons raw apple cider vinegar

1 1/2 teaspoons celery seeds

stevia to taste

unrefined salt and pepper to taste

fresh herbs such as parsley, dill, or basil, chopped (optional)

 

Add all of the veggies to a large mixing bowl.  In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, celery seeds, stevia, salt, and pepper.  Incorporate the dressing into the veggies.  Top with fresh herbs.  Store in the refrigerator.
